About
The atelier
JBake was born from two traditions that share one belief: that beauty lives in what you leave out.

Japandi
Wabi-sabi meets hygge.
Our space in Germasogeia is built from pale oak, washed linen, travertine and paper light. There is no music to compete with conversation and nothing on the walls but the cakes themselves — displayed on plinths, labelled like works in a museum.
The cakes follow the same discipline. Japanese chiffon — lighter than any butter sponge — layered with fresh cream that is sweetened only enough to carry the fruit, matcha or coffee it holds.

Principles
- Made to order
- Nothing waits under glass for days. Each cake is assembled for its date.
- Less sugar
- Japanese balance: sweetness as an accent, never the subject.
- Honest ingredients
- Fresh cream, free-range eggs, Uji matcha, seasonal Cypriot fruit. [confirm suppliers]
